Gazpacho Soup

Well, Gazpacho Soup is the first recipie. I'd like to thank the Red Dwarf site that I used (okay, stole) this recipie from. Visit it: HERE! Anyway, here it is. And, allways remember, this type of soup IS supposed to be served cold.
Ahem, Ahem, Rimmer, Ahem...

When served it can be accompanied by small dishes filled with extra vegetables - diced cucumber, chopped onion, chopped tomatoes, and fried croutons of bread, to give a rather more sustaining soup. To give a stroger flavour to the soup, chill a little tomato juice in place of water, and use this where water is mentioned in the recipe.

You will need for 4 servings:

water
1lb. tomatoes
1 medium sized cucumber
1 onion or several spring onions
1-2 cloves of garlic
1 small green pepper
seasoning
a little olive oil
lemon juice or white wine vinegar

Put the water into the fridge to become very cold. Skin the tomatoes if liked, as this helps when seiving the mixture, and gives a particularly smooth mixture if you are using an electric blender or liquidiser. Peel the cucumber and cut into very small dice, saving a little as garnish. Chop the tomatoes, onion, garlic and add to the cucumber. Either pound until smooth, or rub throug a seive. The pepper can also be seived or chopped very finely, once all the seeds and core have been removed. If using an electric liquidiser you will need to add a little water so that none of the thick mixture is wasted. Put the puree into a basin, then gradually beat in the seasoning, olive oil and enough cold water to give a flowing consistency. Taste, and reseason and add the lemon juice. When serving, garnish with cucumber. This soup must be very cold, so put in the fridge until ready to serve. Serve in ice-cold soup cups.


Curry

Lister is in luck! We have a whole FIVE differest curry recipies! I'd like to thank the website I got these recipies from. Visit it: HERE! Well lets start with Chicken Curry, shall we?

Chicken Curry

You will need...

1 chicken
3/4 cup flour
2 large onions
about 4 cup chicken stock (made previous day)
pepper
1 tsp salt
1/2 tsp ground ginger
2 heaped tsp curry
1 oz unsalted butter

The previous day, place whole chicken in a large saucepan. Cover chicken with water and bring to the boil then simmer for about one hour or until chicken is starting to fall off the bones. Remove chicken and put aside to cool. Pour stock into a large bowl and place in the refrigerator. The next day the fat will have set. Remove the fat and throw it away. Meanwhile, remove chicken from bones and cut into bite size pieces. Put in refrigerator till needed. (Ingredients do not need to be precise.) Place butter and onions in saucepan over a medium to high heat and fry until soft. Add one teaspoon of salt. Add extra butter to saucepan if needed as you are about to add flour, curry powder, ginger, and a good few shakes of pepper (about 1/2 teaspoon). You need the melted butter to combine it all to a thick paste. Stir out any lumps. Add chicken stock one cupful at a time and stir well to smooth paste. Bring to boil after each cupful is added. Continue with this process till sauce is the thickness you like. (I like is fairly thick). Add chopped chicken. Reheat till chicken is hot.

Serve with rice. (Tastes better if cooked the day before). Leftover curry can be frozen. Don't freeze the rice.

Cinnamon Curry Rice

You will need...

250g (8 oz) lean pork, cut into bite-size pieces
2 onions, sliced into crescents
2 potatoes, cubed small
1 carrot, cubed small
1 large apple, minced
2 tablespoons curry powder
2 tablespoons flour
3 cloves garlic, minced
4 cups (1 litre) stock or water
4 tablespoons butter
2 tablespoons frying oil
salt and pepper
310g (10 oz) rice
15g (1/2 oz) Cinnamon

Bring cinnamon to boil in 2 cups water, simmer covered until reduced to 1 cup; strain, discard pulp, reserve broth. Cook enough rice for 5 persons. Heat butter in a wok, add flour and stir well to mix and thicken; then add curry powder and stir well to mix; then add a little stock or water and mix well; return to boil, add carrot, potatoes, and apple, cover, simmer on low heat.
In a separate wok or pan, stir-fry sliced pork quickly in a little oil along with garlic. Remove and reserve. When carrots and potatoes are almost done, add cinnamon broth, pork and onions to the pot, return to boil, simmer for a few minutes, then serve over rice.

Red or Greed Thai Chicken (or Tofu) Curry

You will need...

2 T red or green curry paste (use more for hotter curry; Mae Ploy brand is excellent; if you want vegan**, watch out for shrimp paste as an ingredient in most brands; Curry paste is available in "packets" about the same size as you've seen for chili, taco, or meatloaf seasoning mixes, in small cans, and -- my favorite -- in large plastic tubs; the stuff will store in your refrigerator indefinitely.)
3 T vegetable oil
3/4 lb boneless chicken meat, cut into 3/4-inch pieces or 1 c tofu, sliced into strips about 1/4-inch thick and 1 to 2 inches long (if using tofu, try to get the "seasoned" tofu available in the refrigerated unit at the Asian market; it is soy-sauce colored)
2 cans (unsweetened) coconut milk (approx. 3 c in all)
1 c water** or chicken broth
1/2 c baby corns
1/2 c straw mushrooms (or substitute other mushroom of your choice)
1/2 c sliced bamboo shoots
5 kaffir lime leaves (dried are fine; these are available in packages on the bottom -- usually dusty -- shelf of the Asian market; they look like dried, curled-up leaves)
1/2 t salt (more or less to taste)
if green curry, 10 fresh basil leaves
if red curry, 1/2 red bell pepper, cut into matchstick-size strips

Fry curry paste in oil in saucepan until fragrant. Add chicken (or tofu) and saute for about 1 minute over medium high heat. Add remaining ingredients except basil leaves or red bell pepper. Bring just barely to a boil; reduce heat and simmer 20-30 minutes. Just before serving, stir in basil leaves or red bell pepper. Serve with cooked Thai Jasmine rice (also available at the Asian market -- ask if they have a smaller amount if you don't want to buy a 20-lb bag; they will often make one up for you).

Crockpot Curried Carrots

You will need...

400g carrots, peeled and cut into rings
1 tsp mild curry powder
1 tsp brown sugar
salt and pepper, to taste
3 Tbs melted butter

Arrange carrots in the crockpot and sprinkle with the curry powder, brown sugar, salt and pepper. Pour the melted butter over the carrots and toss thoroughly to mix all ingredients. Cover with lid and cook on HIGH 1 1/2 - 2 hours.

Curried Rice with Lentils

You will need...

1 to 2 tablespoons safflower oil
1/2 onion, chopped
3 cloves garlic, minced or put through a press
1/4 teaspoon ground ginger
1/2 teaspoon turmeric
2 to 3 teaspoons curry powder, to taste
1 cup brown rice, washed
3/4 cup dried lentils, washed and picked over
4 cups water
2 vegetable bouillon cubes
salt, to taste
1/2 cup raisins or currants
1/4 cup sunflower seeds
1 large, tart apple, or 2 medium, diced

Heat 1 tablespoon oil in a heavy-bottomed soup pot, 2-quart saucepan, or Dutch oven and saute the onion with 1 clove of garlic until it begins to turn translucent. Add the ginger, turmeric, and curry poweder and saute for a few minutes longer. Add more oil, if necessary, and the rice, and saute for 2 minutes. Add the lentils, water, bouillon cubes, remaining garlic, raisins and sunflower seeds and bring to a boil. Cover, reduce the heat, and simmer for 25 minutes. Add the apples and simmer, covered, for another 10 to 15 minutes, or until the water is absorbed.
